Tequila Ghost Honey Bee


Tequila is a diverse spirit that can be consumed straight, stirred with liqueurs, shaken with citrus or otherwise fashioned into unique and delicious cocktails. For proof, look to the Tequila Ghost Honey Bee, a spicy riff on the classic Bee’s Knees.

Just combine reposed tequila with a touch of smoky mescal, plus Heart Soul Heat’s Ghost honey syrup, fresh lemon juice and Angostura bitters. The mescal pairs brilliantly with the sweet and spicy honey and tart lemon, but note that it’s employed sparingly as a rinse, in which it’s used to coat the inside of your glass.

Ingredients

    • 1 dash Mezcal, to rinse
    • 2 ounces Casaamigos Reposado tequila
    • 1 ounce Ghost Honey Syrup - ( below )
    • 3/4 ounce lemon juice, freshly squeezed
    • 2 dashes Angostura bitters
    • Garnish: lemon peel

    Steps

    1. Rinse a highball glass with the Mezcal, coating the inside of the glass with a thin layer and then discarding the excess.

    2. Add the tequila, ghost honey syrup and lemon juice into a shaker with ice, and shake until well-chilled.

    3. Strain into the prepared glass over fresh ice, and top with 2 dashes of bitters.

    4. Garnish with a lemon peel.

     

    Ghost Honey in its natural state is too viscous to be used in cold drinks—it will coagulate at the bottom of the shaker and not incorporate into the cocktail. For best results, make a honey syrup by combining equal parts honey and warm water, stirring until the honey is dissolved thoroughly.
